Roasted Cauliflower w/ Herbs and Parmesan Cheese

Roasted Cauliflower


I saw this recipe from other low carbing bloggers as a substitute to their potato or rice and I decided to give it a go.
I am glad that I did because it really satiated my cravings for the rice.
            
This is fairly easy to make and yummy too!

INGREDIENTS:

1 cauliflower head, cut into florets
1 Tbsp extra virgin olive oil
1 Tbsp fresh chopped parsley
1 Tbsp dried thyme
3 garlic cloves, minced
1/4 Cup Parmesan cheese
1 Tbsp fresh squeezed lemon juice
1/2 Tsp salt
1/2 Tsp black pepper

DIRECTIONS:

1. Preheat oven at 450*F.

2. Place cauliflower on a pan. Drizzle with olive oil. Toss well to coat. Bake for 20 minutes turning once in the middle of cooking. Pull out of the oven once in the middle of the cooking. Sprinkle with parsley, thyme and garlic. Bake an additional 5 minutes.

3. Combine the cauliflower, cheese, lemon juice, salt, and pepper in a large bowl stirring well to coat. Serve hot.
