Low Carb Stuffed Peppers

Stuffed Peppers
Inspired by Peace, Love and Low Carbs recipe. A must try!

            



INGREDIENTS:

1 lb black angus ground chuck
2 Cups  mozzarella and provolone cheese (Substitute this with provolone slices, about 6pcs)
3 large green bell peppers
1 medium sweet onion, chopped
1 Cup baby bella mushrooms
2 tbsp butter
2 tbsp olive oil
1 tbsp garlic, minced
Salt and pepper to taste




DIRECTIONS:

Preheat oven at 400*F

1. Slice peppers in half lengthwise, remove ribs and seeds.

2. Slice onions and mushrooms. Saute over medium heat with butter, olive oil, minced garlic and salt and pepper.

3. Saute until onions and mushrooms are caramelized about 25-30 minutes.

4. Add ground beef to the onions and mushroom mixture. Allow to cook for 5-10 minutes.

5. Line the inside of each pepper with cheese (better use those sliced ones, I used shredded because of availability)

6. Fill each pepper with meat mixture until overflowing.

7. Top each pepper with cheese or a slice of provolone cheese.

8. Bake for 15-20 minutes until cheese is golden brown.
