Arroz Caldo Con Pollo - Rice Chicken Soup

Arroz Caldo Con Pollo

My mom is kind of sick the day I made this, so I thought that I would make her a chicken soup, chicken soup with rice. It is particularly known as lugaw in my country, Philippines.

This is a very hearty meal, and is really good for the sick, AND not to say, COLD WEATHER! The good thing about this kind of recipe is that, you only have to put everything inside the pot, stir, wait for it to get done and serve.


INGREDIENTS:

8 Pcs ginger root, peeled and cut into 1/2 inch
6-8 Pcs chicken drumsticks (or any chicken parts you prefer)
2 Pcs scallions, chopped
2 Tbsp olive oil
1/4 cup chopped onion
4 Tbsp patis or fish sauce (or 2 tbsp salt)
6 Cups water
2 Cups uncooked rice
1/4 Tsp ground pepper

DIRECTIONS:






1. In a large pot, heat oil and saute garlic, onion and ginger. Cook until garlic are browned and onions transparent. Add the chicken and patis or salt. Simmer and cover for 5 minutes


2. Add water and rice. Stir often to prevent sticking. Simmer for 25 minutes over low heat or until chicken and rice are tender. Add chopped scallion and pepper before serving.

Serves 6-8.
