Tinolang Manok - Chicken soup in vegetables

Another budget meal coming up! I guess now, you noticed that I am fond of soup. Mainly, it's because of my young boy whom needs to eat something that he can swallow easily . Might as well serve him a nutritious meal that everyone can benefit from this chilly weather that we are having.

A good chicken soup isn't only best served for the sickly and faint. It's a hearty meal, healthy and light. One serving is a meal in itself, well unless you want something added to it. Another good thing about this recipe is that it is under $ 10.00 and you still have plenty of left-overs for the next day.

This recipe is quite versatile in what greens you want to put in. There's a wide variety of vegetable to choose from

INGREDIENTS:

1 lb. chicken wings, cut at the joints (or chicken part of your choice)
1 pc zucchini, peeled and sliced in circles about 1/2 inches thick
6 leave Chinese cabbage, sliced
1 pc chayote, peeled and cubed
2 tbsp patis or fish sauce or salt (can be bought in Asian stores)
Salt and pepper to taste
2 pc one inch sized ginger, peeled and sliced
2 tbsp olive oil or oil of your choice
1 pc small onion
1 tsp garlic, minced
3 Cups water

DIRECTIONS:



1. Prepare and wash thoroughly all vegetables. Set aside.

2. In a skillet, heat oil and add garlic, then onion and ginger. When garlic has browned a little and onions are transparent, add the chicken wings and cook until slightly brown. Add the fish sauce and stir.


3. Add water to boil, turn heat to low, add the vegetables and simmer for 20 minutes or until or vegetables are cooked through. Add salt and pepper to taste.

Serve hot. Enjoy!
