Chicken Vermicelli

Chicken Vermicelli





The ingredients


This recipe is a complete meal by itself because it is loaded with carb and has chicken meat already. I made this one on my own, hoping to entice my son to eat more. I am glad that my efforts paid off because he loves noodles!

INGREDIENTS:

1 med onion, chopped
1 stalk, spring onion, chopped
1 large tomato, chopped
1 cup cabbage, sliced thinly
6 baby carrots, shredded
1/2 cup dried mushrooms
1 pc chicken breast, fillet
Parsley for garnishing
1 tbsp vegetable oil
1 cup water
1 tsp minced garlic
salt and pepper to taste
1 pack (8 0z) vermicelli noodles

DIRECTIONS:

Heat the oil in a skillet, add onion,  garlic, tomatoes and saute until tender. In another container, soak the vermicelli in hot water for 10 minutes and set aside.

When the onions are tender, add the chicken fillet, and stir fry for 2 minutes, add water and the mushrooms. Bring to a boil. Add cabbage, carrots, and stir occasionally  until tender. Season with salt and pepper, add the noodles,  and spring onions, mix thoroughly.

Transfer to a bowl or serving dish, sprinkle with parsley garnishing and serve hot.
