Sauteed Chicken in tomatoes and veggies












If you want an easy dish and you don't need much of meat, here's a recipe for you.

I needed something to feed my son other than the organic preserves we had in the pantry so I made this. It is healthy as well as filling.

INGREDIENTS:

4 Pcs Baby Red Potatoes
2 Pcs Big Red Tomatoes
1 Medium Onion, chopped
2 Cloves garlic, minced
8 Pcs Baby Carrots
2 Tbsp Olive Oil
Salt and Pepper to taste
1/4 Quarts Cabbage, sliced
4 Pcs Sliced Red Bell Pepper, cut lengthwise
1 Pc Chicken Breast, cut into cubes
1 Cup Water

DIRECTIONS:

Saute garlic, onions and tomatoes in a skillet. Add the potatoes when the tomatoes are already cooked, add 1 cup of water and cover until the potatoes are softened. Add the chicken when it is done, simmer for two minutes, add the salt and pepper according to taste.

For us Asians, this is best served with rice. But you can also eat this as a meal in itself.
