Zucchini Floaters

Zucchini Floaters
This is one of my favorites in preparing zucchini, it is flavorful and a definite low carb. What's best about it? It's so EASY to make! You can eat it as it is, as a snack, a side dish, anything!



INGREDIENTS:

4 pcs zucchini, halved. Bottom removed for balance.
Tomato slices (any preference)
Mozzarella shreds
Parmesan Cheese
salt and pepper to taste
Olive oil

DIRECTIONS

Preheat oven at 375*C

Brush zucchini with olive oil. season with salt and pepper. Place tomatoes. Place Mozzarella and topped with Parmesan. Place in a foil covered baking dish. Cook for 20-30 minutes.

  1. This sounds like a really good idea -- I think I'd add some oregano and maybe some sauteed onion to increase the pizza-like ambiance of this dish.

  2. These do look good! I do a similar dish but with 1/2" slices of zucchini and a bit of minced green onion added to them. I like the method for your, whole. I definitely plan to try these!

  3. I use Old Bay Seasoning on these and add whichever fresh herb I have growing. I haven't tried the tomato, don't know why, it's such a great idea. Thanks for sharing! Really a great way to liven up this squash and can be a main meatless meal!
