Grilled Pot Roast with Cucumber Salad and Roasted Red Bell Pepper

Grilled Pot Roast with Cucumber Salad

Lazy dinner recipe. No need for some fancy recipe, just grill and wait.
                                       
 For the INGREDIENTS:

 2 lbs Beef pot roast
Garlic powder
Barbeque sauce of your choice
1 Tbsp Olive oil
 Salt and pepper
1 Pc red bell pepper, cut into squares, roasted (brushed with olive oil and salt)

For the Cucumber Salad:

1 pc. large cucumber, sliced in circles
1/2 Cup white vinegar
1/2 Tbsp sugar
1 pc large onion, cut into rings
1 pc large tomato, cut into circles
Salt and pepper to taste

PREPARATION:

For the Salad:

Mix all the ingredients together and chill.



Mix Salt, pepper and garlic powder in a small bowl, use it to rub the meat, making sure everything is covered or patted down with the mix.

In another container, mix together the bbq sauce of choice and the olive oil. Use it to baste your meat. Brush once before grilling and again 5 minutes before it gets done.

Heat grill and put the meat. For a 2 lb roast, the temperature of the meat should be between 135 - 150F.




When the meat is done, slice into portions and drizzle with a little sauce. Sprinkle with roasted bell peppers and serve with the cucumber salad on the side.
