This can still be considered low carb provided that you don't eat the potatoes. I need to include potatoes because I have a little mouth to feed and a skinny person that I need to put on some flesh. This is fairly easy to make and delicious too!
INGREDIENTS:
2 Tbsp vegetable oil
Salt and pepper to taste
6 Red potatoes, halved
1 Cup baby carrots
1 Red tomato, sliced
1 Tsp garlic, minced
1/4 Cup green peas
1 Can tomato sauce (small)
1/2 cup green bell pepper
1 lb chicken (parts of your choice)
1 Cup water
DIRECTIONS:
Heat oil in skillet. Add garlic and then onion. When onion is transparent, add the tomatoes, then the chicken, cook for 2 mins then add the potatoes and carrots, then water. Cook until potatoes and carrots are tender. Add the remaining ingredients. Cook for 5 minutes more. Add salt and pepper to taste.
