Chocolate Chip & Oatmeal Quick Bread |
This recipe was a gift to my sister, who by the way, doesn't like to be around the kitchen most of the time. So this recipe, together with the homemade packed ingredient was just sitting there waiting to be given some attention it so much deserved.
I am not a fan of breads or anything sweet, really. That's why my attention wasn't "CAPTURED" right away on this one. Since it's new year, I decided to give it a go, just so I can clear up the counter.
It turned out to be really good, and it's nothing too sweet. It's perfect for your morning coffee, or just something to nibble on for snacks. It's easy to make, and I am pretty sure your kids will love it, too.
I am sharing the recipe so you can enjoy this as we did.
INGREDIENTS:
1 1/3 cups all purpose flour
2/3 cups oats, quick or rolled
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup chopped walnuts, optional
1/3 cup chocolate chips
1 large egg
3 tablespoons butter, melted
1 cup low fat buttermilk (I made mine though, for every cup of milk, add one tbsp of white vinegar and let sit for 5 minutes, use as needed)
DIRECTIONS:
1. Preheat oven to 350*F
2. Place all ingredients that are in your jar into a large bowl and whisk together.
3. In a small bowl, whisk together the buttermilk, egg and melted butter.
4. Stir the wet mixture into the dry ingredients and stir with a wooden spoon or rubber spatula just until evenly moistened; the batter will be lumpy.
5. Pour the batter into a greased and floured 9x5 inch loaf pan and bake at 350* until a toothpick or skewer inserted in the middle comes out clean, about 45 - 50 minutes.
