Pork Kilawin

Pork Kilawin

Okay, although it says 'Kilawin" - or raw food, It's not what it is. That is our left-over pork chops and I need to do something else about it because we just have too much meat. That is the only thing change in the recipe. Everything else, I got it.

This is good to have if you have a boys night 'in', or some gathering where drinks (beer) are being served.

For the INGREDIENTS:

1 lb pork chops, cooked, sliced and diced (You can use raw meat such as fish, or pork meat, boiled and salted, cut into half inch and drained)
3 pcs Chili, available in Asian stores, washed and chopped (You can make adjustments with this, depending on how hot you would like it)
1 medium onion, cut in half and sliced thinly (Red onion is better)
1"sized ginger, peeled and sliced thinly
1 pc lime, juiced and zest
1/2 Cup evaporated milk (I used fat free)
1/4 Cup white vinegar
Salt and pepper to taste

DIRECTIONS:

In a large bowl, just mix everything and season with salt and pepper according to taste. Chill for an hour. (You don't have to do this but when you do, all the flavor comes together.)
