Chicken in Avocado Salad

Chicken in Avocado Salad

This was supposed to be a chicken salad avocado wrap, but the wrap that I bought was not the one I wanted so it ended up as a salad instead. It's still good, just missing the tortilla, that's all. This can be served as an appetizer, snack or light meal. Anyway you like it.

INGREDIENTS:

1/2 Cup of  Mayonnaise
4 Crispy Bacon Strips, chopped
1 Pc medium onion, chopped
Strips of green bell Bell Pepper, roasted
Mixed Salad Vegetables
10 0z. Chicken Breast, chopped into 1 or 1/2" thick
Black Pepper to taste
1 medium avocado, washed, seed removed, pitted and mashed
1Tbsp butter
1 tsp garlic, minced
1 tbsp lime juice


PROCEDURE:
In a heated skillet, pan-sear the chicken with butter, cook until it turns into a beautiful brown on both sides. Cut into cubes when cooked and cooled down. 
 
In a salad bowl, place the mixed salad vegetables, and the rest of the ingredients, mix thoroughly. Add the chicken and chill for an hour. Serves 2.
