Pork chop with sauteed zucchini
Today, I am kind of getting lazy to prepare something fancy, I ended up frying my food. Still, I used a minimal amount of HEALTHY oil. The emphasis is on the word healthy here because even if it is fried use whatever is best for you.

This is fast and relatively easy to prepare. You can marinate the pork in advance or just prep it up with a little bit of salt and pepper and you are good to go.



INGREDIENTS:

1 lb. pork loin chops
3 tbsp soy sauce
4 cloves garlic, crushed
pepper
1 tbsp lemon
olive oil
1 zucchini, peeled and sliced

DIRECTIONS:

 In a plastic container, mix soy sauce, garlic, pepper, lemon and pork loin chops. Marinate and refrigerate for an hour.

In a heated skillet, pour olive oil and fry the pork chops until golden brown. Pour the remaining marinated mixture and cook for 3 minutes more. Set aside and drain excess oil with cloth or napkin.

Stir in the zucchini in the remaining oil (lessen if there's too much) and saute until tender, dash in a little bit of salt and pepper.

Serve together with the pork chop.
