California Blend

California Blend

Another one of my low carb dishes, and still on the budget end. I tend to mix a lot of vegetables when I am on budget mainly because it is inexpensive, and a good low go for low carb followers.

Enough about the chit-chat, here's the recipe. It's as easy as one, two, three. Let me know how yours turned out.



INGREDIENTS:

1 pk frozen California blend vegetables or fresh broccoli, cauliflower and carrots cut into bite size portions
1 cup ground lean turkey
salt
pepper
1/2 cup roma tomato
minced garlic
1/4 cup onion, chopped
1 tbsp olive oil or oil of your choice

DIRECTIONS:

1. Steam or defrost vegetables, then drain.

2. In a preheated skillet, pour oil, add the garlic, then onion, tomatoes in high heat, stir constantly.

3. Add the ground turkey meat. Cook until brown. Season meat with salt, stir and cover for 4 minutes on medium heat. Add the vegetables and stir until everything is well mixed. If it is too dry, add a little water. Season with salt and pepper.

Serves 4.

Adjust recipe portions if you feel that the amount/measurement I have here is too small for you.
