Asparagus Salad

Asparagus Salad

This by far is my easiest discovery. You can just make these any way you want. You can grill, saute, blanche, use it for salad or side dish. I just love these!



INGREDIENTS:

1 bunch Asparagus, cut into 1 1/2 inch, hard parts removed
2 Tbsp Olive oil
1/4 Cup chicken stock
1/2 Tsp Dry ranch seasoning

Ranch Seasoning : (Adapted from Living Low Carb...One Day at a Time)
1 Tbsp dried parsley
1 tsp dried basil
1 tsp onion powder
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp ground mustard

DIRECTIONS:

In a skillet, heat oil and stir-fry asparagus for 4-5 minutes.  Add the ranch seasoning. Cook for additional 2 minutes. Serve as a side dish.

For the Ranch Seasoning:

Combine the parsley, and basil in a spice grinder or mortar and pestle and grind to a powder.  (I didn't do this, instead I just mixed them all together). Combine the mixture with the rest of the ingredients.   In a separate small skillet, heat up chicken stock and add the seasoning. Simmer for 3 minutes. Add mixture to the asparagus.
