Angel Hair Pasta with Chicken

Yummy Angel Hair Pasta with Chicken









I found this recipe in one of my mom's drawers and I was intrigued to try it. Fortunately, it was flavorful that my son had a good meal with this one.

TIPS:

Before cooking pasta, rub the sides of the pot with a little vegetable oil. This will prevent the water from boiling over the pot.

INGREDIENTS:

2 Tbsp Olive oil, divided
2 Skinless, boneless chicken breast, halves, cut into cubes
1 Carrot, sliced into 1/4 inch
1 (10-ounce) package frozen broccoli florets, thawed
2 Cloves, garlic minced
12 Ounces angel hair pasta
2/3 Cup chicken broth
1 Tsp dried basil
1/4 Cup grated Parmesan cheese

DIRECTIONS:

Heat 1 tablespoon oil in a medium skillet over medium heat; add chicken. Cook and stir until chicken is cooked, about 5 minutes. Remove from skillet and drain on paper towels.

Heat remaining oil in the same skillet. Begin heating water for pasta. Add carrot to skillet; cook, stir for 4 minutes. Add broccoli and garlic to skillet; cook and stir for another 2 minutes.

Cook pasta according to package directions. Cook chicken broth, basil and Parmesan to skillet. Combine everything and return the chicken to skillet. Reduce heat and simmer for 4 minutes.

Drain pasta. Place a in a large serving bowl. Top with chicken and vegetable mixture. Serve immediately.
