I have always been curious about the emerging trend over the internet regarding the Paleo smoothie drinks. I have decided to let my doubts get the best of me and try it instead.<br />
<br />
A couple of try-outs didn't go bad, but they weren't my favorites either. But this, ahh...the lemony twist and freshness of flavor, that surprised me and has stayed on my list of things to make early in the day.<br />
<br />
I have to say that I am impressed and surprised that when I had a glass of this smoothie every morning, my hunger pangs were gone and I felt full the whole morning.<br />
<br />
So here's the recipe, I hope you will enjoy it as I did.<br />
<br />
INGREDIENTS:<br />

<br />
3 cups of baby Kale<br />
2 pcs medium banana<br />
1 med-large avocado <br />
l lemon<br />
honey (optional)<br />
2-3 cups of water<br />
<br />
DIRECTIONS:<br />
<br />
In a blender, pour in kale, banana, avocado and water. Mix until all the ingredients have become thick. Add four tbsp lemon or add more according to your taste, add honey, and blend for 20 secs.<br />
<br />
You can add more or less water, depending on how you want your smoothie to be.<br />
<br />
Makes 4 servings.<br />

1/2 lb beef tenderloin, cut into thin strips or cubed<br />

You can add more ingredients of your choice( chicken, pork cuts, squid, noodles, anything!), on my end, these are what I readily have. <br />

<b>DIRECTIONS</b><br />

Heat wok in high heat. Put about 2 tbsp cooking and spread. Add onions, when transparent, add beef, stir for a minute, then add the shrimp, broccoli, zucchini, mushrooms and continue to stir for five minutes, add enough soy sauce (according to your taste) and mix, add minced garlic, stir, and add hot chili sauce. Stir fry until cooked, and serve steaming hot.<br />

In a heated skillet, melt butter, saute garlic and onion. Add all the vegetables. Cook in medium high heat, stir occasionally and cover. Add the Italian seasoning accordingly. Cook for 5-10 minutes, enough that it is still crispy but no longer raw. Season with salt and pepper.<br />

So, being able to stumble upon a great sale day at our local food market here, I just couldn't resist NOT to buy this HUGE pork roast at .89 c/lb, hence, the picture.<br />

I have so many ideas that would go great with the pork roast, but I decided to cook it as simple as that in the picture because I wanted to learn how to cook it perfectly, not overdone.<br />
<br />
I am glad I took the risk and went ahead, with just a rub for ingredients, the outcome was awesome! It was juicy, flavorful and tender.<br />
<br />
There is a definite encore of this recipe in the future (when all of it is gone).<br />

March is almost over and I barely cooked anything. Working has taken it's toll on me, and I have been abusing my body with all the frozen prepared foods and eating out. I still am not there, but I am pulling my weight to get back on track. I want to get back on cooking all my meals.<br />

Anyway, I wanted to share one of my favorite foods. We call this, <i>ginataang langka</i> (jack fruit), or jack fruit in coconut milk. I can remember my family gathering around the table, with this at the center, and we have our share of vinegar dips (white vinegar with a dash of salt) and plain rice. The fun and mess we made!<br />
<br />
If you like coconut milk, an adventurous palate, I am pretty sure you will enjoy this one.<br />
<br />
<br />

<br />
4 cans 10oz Aroy-d young green jackfruit (available in Asian stores)<br />
1 pc medium red bell pepper, cut into thin strips<br />
1 tsp minced garlic<br />
1 onion, chopped<br />
salt to taste<br />
3 cups coconut milk<br />
2 cups large shrimp (or adjust accordingly)<br />
1 cup (chicken meat, bone-in, or any preference)* optional<br />
1 knob ginger, cut into strips<br />
2 pcs chili (optional)<br />
<br />
<b>DIRECTIONS:</b><br />
<br />
In a skillet, add 1 tbsp olive oil, heat and add the chicken, cook until brown. Set aside.<br />
<br />
In a large pot, mix all the ingredients, except for the shrimp.<br />
<br />
Evenly level the coconut milk and jackfruit to avoid dryness. Cook covered for 15-20 minutes over medium heat.<br />
<br />
When jackfruit is fork tender, add the shrimp and salt. Cook for 5 minutes more. Serve with rice and white vinegar with a dash of salt as dip for the jackfruit and shrimp.<br />

When I first heard about sloppy joes, and I have seen different variations, I wanted to try it but kept putting it up since I get too tired when I get home. There's the slow cooker version, but I tried this fastest first just to get a glimpse and taste of what it's like.<br />

2 cups Napa Valley cabbage<br />
1/2 tsp cumin<br />
1 tsp garlic powder<br />
1 tsp Mexican chili powder<br />

1 cup tomatoes, chopped<br />
1 tbsp worcestershire sauce<br />
1/2 tsp black pepper<br />
1/4 cup chopped red bell pepper<br />

<b>DIRECTIONS:</b><br />
<br />
1. In a skillet, add coriander seeds, heat them up over medium heat. When they are browned, set aside.<br />
<br />
2. In the same skillet, add the olive oil, then add the garlic, and the onion. When garlic has browned a little and onions have turned transparent, add the ground meat and crumble in the skillet. Saute for a few minutes and then add the cabbage.<br />
<br />
3. Add the rest of the ingredients (except tomatoes, bell pepper, and Worcestershire sauce) one at a time and mix thoroughly before adding the next one. Add salt and pepper, season to taste. Cook until meat is tender and the vegetables are cooked thoroughly.<br />

Hooray! Hooray, for finally being able to make my very first baked back ribs and successful at it. It was really tender and juicy. The flavor was sweet and a little bite of spiciness.<br />

Here's my recipe and do enjoy!<br />

1 rack, 3-4 lbs pork back ribs<br />
<br />
<b>Rub: - You can follow this or you can make your own or simply salt and pepper.</b><br />
2 tsp paprika<br />
1 tsp black pepper<br />
2 tsp coarse salt<br />
1/2 tsp garlic powder<br />
1/4 tsp onion powder<br />
1/4 tsp cayenne powder<br />
<br />
<b>Baste:</b><br />
2 tbsp olive oil<br />
1/2 cup soy sauce<br />
lime juice<br />
1/4 - 1/2 cup of honey or sweetener of your choice<br />

<b>DIRECTIONS:</b><br />

Preheat oven at 225*<br />
<br />
In a medium mixing bowl, mix altogether the spices and set aside.<br />
<br />
In another bowl, mix the basting sauce and set aside.<br />
<br />
Wash the pork ribs with water and pat with paper towel. Season the meat with the rub.<br />
<br />
Place meat side down in the baking dish and cover with aluminum foil.<br />
<br />
Place inside the oven and cook for 3.5 hours.<br />
<br />
Remove baking dish from oven and remove the juice that accumulated. Cover ribs with basting sauce and bring it back inside the oven without the aluminum foil. Cook for 30 minutes more. <br />
<br />
Serves 4-6. <br />

My, my, it has been a while since I posted anything here. I barely have time to cook any decent meal. If I do, they're usually a repeat of what I already have here. My mind is just too lazy nowadays to even 'think' of what to cook. I am busily adjusting to the "Working Lifestyle".<br />

Okay, so blabber aside. This is another first for me. My first sweet and sour pork. I usually cook fish in this kind of recipe, and this time I had to substitute or remove some ingredients for healthier reasons.<br />

1 lb lean pork meat, cut into cubes<br />
1 green bell pepper, cubed<br />
1 reb bell pepper, cubed<br />
1 tbsp olive oil<br />
salt to taste<br />
1 tsp garlic, minced<br />
1/2 cup onion, chopped<br />
1 cup white vinegar<br />
1/2 cup honey (or any honey substitute of your choice) <br />
1 tsp ginger, finely cut into strips<br />
1 cup tomatoes, chopped<br />

<br />
<b>DIRECTIONS:</b><br />
<br />
<b>*Optional - </b>To add more flavor to your meat, and if you have more time before cooking. Marinate the meat in 3 tbsp soy sauce and 1 tbsp of lemon for 3 hours.<b> </b><br />

In a heated skillet, pour oil, add garlic, then onion, then ginger. Add meat and cook until browned. Add the vinegar, and honey. Bring to boil. <br />
<br />
Add the bell peppers, and tomatoes. Cook covered for 10-15 more minutes. Depending on how thick you want the gravy to be, you can add a little water to it if you want it a little watery. Season to taste.<br />
<br />
Serve hot. <br />

Mix together everything in a bowl, using your hands. Set aside.<br />

1. In a heated skillet, add olive oil, onion, bell pepper, and then the pork sausage. Cook until it is no longer pink. <br />

2. Add 1 cup of water, bring to a rapid boil, lower heat and cover. Cook until the oil will fry the meat itself. When water is almost gone, add the shredded carrots and cook, stir constantly. <br />
<br />
Adding the carrots at this almost last minute and cooking it for a few minutes, retains its crunchiness. You can serve this in portions as a meal in itself, or served with steamed broccoli.<br />

This recipe was a gift to my sister, who by the way, doesn't like to be around the kitchen most of the time. So this recipe, together with the homemade packed ingredient was just sitting there waiting to be given some attention it so much deserved.<br />

I am not a fan of breads or anything sweet, really. That's why my attention wasn't "CAPTURED" right away on this one. Since it's new year, I decided to give it a go, just so I can clear up the counter.<br />
<br />
It turned out to be really good, and it's nothing too sweet. It's perfect for your morning coffee, or just something to nibble on for snacks. It's easy to make, and I am pretty sure your kids will love it, too. <br />

<br />
<b>INGREDIENTS:</b><br />
<br />
1 1/3 cups all purpose flour<br />
2/3 cups oats, quick or rolled<br />
1/3 cup granulated sugar<br />
1/3 cup packed light brown sugar<br />
1 1/2 teaspoons baking powder<br />
3/4 teaspoon baking soda<br />
1/2 teaspoon cinnamon<br />
1/2 teaspoon salt<br />
1/3 cup chopped walnuts, optional<br />
1/3 cup chocolate chips<br />
1 large egg<br />
3 tablespoons butter, melted<br />
1 cup low fat buttermilk (I made mine though, for every cup of milk, add one tbsp of white vinegar and let sit for 5 minutes, use as needed)<br />
<br />
<b>DIRECTIONS:</b><br />
<br />
1. Preheat oven to 350*F<br />
<br />
2. Place all ingredients that are in your jar into a large bowl and whisk together.<br />
<br />
3. In a small bowl, whisk together the buttermilk, egg and melted butter.<br />
<br />
4. Stir the wet mixture into the dry ingredients and stir with a wooden spoon or rubber spatula just until evenly moistened; the batter will be lumpy.<br />
<br />
5. Pour the batter into a greased and floured 9x5 inch loaf pan and bake at 350* until a toothpick or skewer inserted in the middle comes out clean, about 45 - 50 minutes.<br />

Today, my family is cooking something for the new year, and I wanted to contribute a little, and trying out my new crock-pot cookbook...<br />
<br />
I started with something easy and that everyone can make them without too much baloney, this recipe is good for easy entertaining, snacks, game day recipe to prepare.<br />
<br />
So, here it is! Do enjoy it.<br />
<br />
Serves: 8<br />
Prep time: 20 minutes<br />
Cook time: 2 hours (low), 1 1/2 (high )<br />
<br />
<b>INGREDIENTS:</b><br />
<br />
3/4 cup turkey pepperoni, chopped<br />
4 scallions, chopped<br />
1 can olives, sliced (you can use black olives too)<br />
1 package cream cheese<br />
1 cup mozzarella cheese<br />
1 14oz pizza sauce<br />
1/2 tsp dried oregano<br />
<br />
<b>DIRECTIONS:</b><br />
<br />
1. In your crock-pot, combine the scallions, olives, oregano, pepperoni and pizza sauce. Cover and cook on low for 2 hours or 1 1/2 on high or until the mixture is hot.<br />
<br />
2. Stir in the mozzarella and cream cheese until melted and blended well.<br />
<br />
Best served hot with your favorite bread. I chose garlic bread.<br />

You can still go low carb with this one, just omit the potatoes! I had to use some so my son can eat some carbs.<br />

1 lb chicken drumstick (or any chicken part of your choice)<br />
4 pcs large red potatoes, quartered and peeled (optional)<br />
1/2 cup green peas<br />
1 cup <a href="http://cravinghaven.blogspot.com/2012/12/meaty-marinara-sauce.html" target="_blank">homemade marinara sauce</a> (you can make the marinara without the meat from my recipe)<br />
salt and pepper<br />
bay seasoning<br />
1 tbsp olive oil <br />
1 tbsp minced garlic<br />
1/2 cup chopped onion<br />
1 cup water<br />
<br />
<b>DIRECTIONS:</b><br />
<br />
In a preheated skillet, pour oil, then add garlic, onion. Cook until garlic is browned and onions, transparent.<br />
<br />
Add the chicken, cook covered until chicken are cooked. Season with bay seasoning. Cook for 2 minutes more. Add water, bring to a boil. Add potatoes, and cook until fork tender.<br />
<br />
Add the marinara sauce. Simmer for 10 minutes. Season with salt and pepper. Add the green peas.<br />
<br />
Cook for 10 minutes more or until the chicken are cooked through.<br />

1 pk frozen vegetable stir-fry, thaw according to package instructions.<br />
1/2 lb. lean pork chop, cup into 1/2 in. thick<br />
1/2 cup onion, chopped<br />
1 tsp garlic, minced<br />
2 tbsp oyster sauce<br />
2 tbsp fish sauce or salt<br />
few strips of red bell pepper<br />
1 tbsp oil of choice (I used olive)<br />
1/2 cup water (optional) <br />

<b>DIRECTIONS:</b><br />

In a preheated skillet, pour oil. Add garlic, then onion, stir constantly until onion is transparent. Add bell pepper. Add pork and cook until golden brown. Season with fish sauce. Stir for 3 minutes.<br />

I made my first marinara sauce a few months back, but I only got the chance to post it now because I have the need to use it again in one of my recipes. I made a slight adjustment and addition to this recipe and my, oh my, it is heavenly I TELL YOU!<br />
<br />
This recipe is flexible, you can remove the ground turkey ingredient if you just want to make the sauce. <br />
<br />
I use this for my pasta recipes or anything that needs pasta sauce. You can be creative.<br />
<br />
<a name='more'></a><b>INGREDIENTS:</b><br />
<br />
2 pcs yellow onion, peeled and chopped<br />
4 tbsp olive oil, divided<br />
6 cloves garlic, minced<br />
1 lb ground turkey<br />
2 tbsp dried herbs(I just use Italian seasoning)<br />
1/2 cup red wine (optional)<br />
12 cups fresh roma tomatoes, peeled, seeded and quartered<br />
salt and pepper<br />
old bay seasoning <br />
<br />
<b> DIRECTIONS:</b><br />
<br />
Heat olive oil. Add onions and cook slowly until they caramelized. Add garlic and dried herbs. Cook for 5 minutes.<br />
<br />
De-glaze the pan with 1/2 of the red wine and cook for 2 minutes more. Add the tomatoes and their juice, stir to combine. Bring to a simmer and cook low, stirring occasionally for at least two hours, depending on the water content of the tomatoes.<br />
<br />
The sauce should be thick with much of the water evaporated to concentrate the flavor. Add salt and pepper to taste.<br />
<br />
In a separate skillet, heat remaining oil, add and cook the ground turkey, and cook until brown. Season with salt and pepper and 1/2 tsp of old bay. Cook thoroughly. Mix with marinara sauce and simmer low for an hour. Serve together with your favorite pasta or meat.<br />

6-8 oz chicken breast, chopped or cut into strips<br />
1 cup baby cabbage, cut into several pieces<br />
1/2 cup onion, chopped<br />
1 tsp garlic, minced<br />
3 tbsp fish sauce (patis)<br />
pepper<br />
salt<br />
1 tbsp olive oil<br />
1/2 cup water <br />

<b>DIRECTIONS:</b><br />

1. In a preheated skillet, heat oil. Add garlic, then onion. Saute until garlic is a little browned and onion transparent.<br />

2. Add chicken, cook for 4 minutes in high heat. Stirring constantly. Pour fish sauce and continue to cook for 2 minutes.<br />

3. Add the vegetable, cook for 2 minutes, stir constantly. Add water, bring to a boil. Add the noodles and cover until cooked thoroughly. Season with salt and pepper. <br />

I always loved pasta even if I am on a special diet. A month can't possibly go by without me having to bake, or cook one especially for my son. Of all the pasta treats that I make, this one takes the cake. It was the tastiest so far that I ever made.<br />

8 oz large elbow macaroni, cooked according to package instruction. Set aside.<br />
2 cups homemade <a href="http://cravinghaven.blogspot.com/2012/12/meaty-marinara-sauce.html" target="_blank">marinara sauce</a> <br />
1 1/2 cup sharp cheddar cheese, shredded<br />
1/2 cup cream cheese<br />
1/2 cup Parmesan cheese, shredded<br />
1/2 lb ground turkey <br />
1 tbsp olive oil<br />
1/2 cup onion, chopped<br />
1 tsp garlic, minced<br />

<b>DIRECTIONS:</b><br />
<br />
Preheat oven at 350*F<br />
<br />
1. In a preheated skillet, pour oil, then garlic, then add the onion and cook until transparent.<br />
<br />
2. Add in the ground turkey, and cook until brown. Add the <a href="http://cravinghaven.blogspot.com/2012/12/meaty-marinara-sauce.html" target="_blank">marinara sauce</a>. Bring to a boil, and then simmer for 10 minutes. Add 1/2 cup of shard cheddar cheese. Mix well until melted. Set aside.<br />

3. In a mixing bowl, mix the elbow macaroni and marinara sauce. In a separate baking dish, place half of the mixed elbow macaroni, add the sharp cheddar cheese and spread evenly on top. Add the remaining elbow macaroni and spread evenly. On top of the macaroni, spread the cream cheese and sprinkle Parmesan cheese.<br />

4. Bake for 30 minutes or until cheese are melted. Makes 6-8 servings.<br />

Finally, December is here! I am excited for all the wonderful dishes I am about to cook this month. Before we know it, it will be a new year! So many things are happening at once, many changes, many beginnings, I am looking forward to it.<br />

Well, I might as well be well-nourished to tackle everything.<br />

Here's my recipe for today;<br />

1/2 lb large shrimp, shelled, deveined with tails on<br />
1 pk. frozen green beans, thawed or steamed<br />
1/2 cup chopped onions<br />
1 tsp minced garlic<br />
1/2 cup roma tomatoes, chopped <br />
1 tbsp olive oil or oil of your choice<br />
salt and pepper to taste<br />
1/2 cup water<br />

<b>DIRECTIONS:</b><br />

In a preheated skillet, pour oil. Add garlic, saute until brown. Add onions, cook until transparent. Add tomatoes. Add shrimp, and cook for 2 minutes. Add green beans, water, bring to a boil. Salt and pepper to taste. Serve hot.<br />

My, my, November has come and gone along with my cooking. It turned out that November was pretty much the busiest, and to say the least, the most stressful month so far this year. I had so many things to do and accomplish! There's the full-time job of looking for a full-time job, driving practice, interviews, and the last and final league of all these craziness, the driving test! Wish me luck. All these activities made me prepare and eat sodium-packed food. Not that I am complaining.<br />

So when I got the chance to cook, this was the first recipe I had in mind. I just love chicken livers. Considering that when I was small, I used to hate it with all my heart. You can do so many things with chicken livers. You can saute them in soy sauce, mash them, grill them...grilled chicken livers is my favorite, but my son can't eat anything yet that's too dry, I mixed it with vegetables. It's a quick and easy recipe. I'm glad that he liked it.<br />

Here's the recipe for you guys;<br />

<b>INGREDIENTS:</b><br />
<br />
3 cups Chinese cabbage<br />
1 1/2 cup chicken livers, cut into quarters<br />
1 pc roma tomato, chopped<br />
1 tsp garlic, minced<br />
1/2 cup onion, chopped<br />
1 tbsp olive oil<br />
1 cup water<br />
salt and pepper to taste <br />

<b>DIRECTIONS:</b><br />
<br />
1. Pour oil in a preheated skillet, add the garlic, then onions. Cook until transparent. Add tomatoes, stir and cook for 3 minutes. Add water, bring to a boil. Add the vegetable, cook for 5 minutes covered. Add the chicken livers. Cover until nearly done. Season with salt and pepper. Stir. Cook for 5 minutes more. Serve hot.<br />
